Every year I watch Food Network Star. I love watching a new star emerge from a group of seriously talented competitors.

This year, I’m extra excited to watch….

Because I’m going to be on the show!

Or not.

SO not my cup of tea. However, one of the very first bloggers I “met” when I started blogging is going to be competing on the show this year. I’m so (so, so!) excited for Jay of Bite and Booze!

Don’t forget about us when you’re famous, Jay.

I’ve gotten together with a few of my blogger friends (if you’re a long-time follower of Rachel Cooks, you’ll remember the Virtual Potluck crew) to wish Jay luck and you know…just to help him remember us WHEN HE WINS.

Jay will be on Food Network Star, season 11, premiering June 7th (Sunday!) at 9pm (8pm Central).

Watch it with me!

Update: Obviously this is all over with, but Jay did great and we’re all so proud of him!

To help celebrate Jay and all his successes thus far, I made a recipe with his BBQ sauce. Yes, his BBQ sauce. He was nice enough to take a break from being a Food Network Star to send me a bottle to create a recipe with. Or maybe he had one of his people send it to me. Either way, I got delicious bbq sauce out of the deal, so I’m not complaining.

This bbq chicken burrito bowl is the perfect lunch for one (or dinner!). I almost always have some sort of grain in my fridge – this week I had leftover rice from some dinner I made. I picked up a rotisserie chicken from the store and shredded it to also use for quick meals. The rest of the ingredients are pretty much pantry/fridge staples for me. With a little meal prep and planning ahead, you can have quick and easy lunches and dinners that aren’t boring – say goodbye to turkey sandwiches everyday. (Although I do love a good turkey sandwich!)

The best thing about a meal like this is that there really is no wrong way to do it. I topped the chicken burrito bowl with lettuce, cilantro, and baked beans but it would be great with any assortment of toppings. Here are a few suggestions:

  • cheese (duh)
  • crispy bacon (again, duh.)
  • jalapeno slices if you like things spicy
  • coleslaw
  • sliced green onions
  • sour cream to cool things down a bit
  • sliced red cabbage
  • french fried onions
  • pickled onions
  • or, you know, all of the above

Ingredients:

  • 1 teaspoon olive oil
  • 1 small onion, sliced thin (or about 1/2 cup of sliced onion)
  • 1/2 red bell pepper, sliced thin (about 3/4 cup)
  • 1 cup shredded cooked chicken
  • 2 tablespoons JayD’s Barbecue Sauce
  • 1 cup rice, warm (I used brown)
  • Toppings: I used lettuce, cilantro, baked beans (about 1/2 cup) and additional bbq sauce

Directions:

  1. In a medium saucepan over medium-high heat, heat oil until hot. Add onion and red bell pepper and season with salt and pepper.
  2. Cook, stirring frequently, until onions are translucent (or however you like them!). Add chicken and bbq sauce and continue to cook until heated through.
  3. Serve over rice with desired toppings.

Verdict: Ben ate most of this, but I snuck a bite. A great lunch (dinner too!) – perfect to get you out of that rut. The bbq sauce has a perfect balance of sweet and spicy.
Husband’s take: It disappeared quickly! I was a little worried it might have too much going on for him (beans, chicken, etc.), but he loved it!
Changes I would make: None are necessary, but don’t forget to have fun with toppings!
Difficulty: Easy.

Need more uses for the rest of that rotisserie chicken? Try: Farro Salad with Chicken and Beets, Chicken Enchilada Flatbread, Cabbage Salad with Honey Lime Dressing, or Orzo Salad with Chicken and Vegetables.
