Every year I watch Food Network Star. I love watching a new star emerge from a group of seriously talented competitors.
This year, I’m extra excited to watch….
Because one of the very first bloggers I “met” when I started blogging is going to be competing on the show this year. I’m so (so, so!) excited for Jay of Bite and Booze!

I’ve gotten together with a few of my blogger friends (if you’re a long-time follower of Rachel Cooks, you’ll remember the Virtual Potluck crew) to wish Jay luck and you know…just to help him remember us WHEN HE WINS.
Jay will be on Food Network Star, season 11, premiering June 7th, 2015 (Sunday!) at 9pm (8pm Central).
Update: Obviously this is all over with, but Jay did great and we’re all so proud of him!

About this chicken burrito bowl
This BBQ chicken burrito bowl is the perfect lunch for one (or dinner!). I almost always have some sort of grain in my fridge – this week I’m using leftover rice. I use a rotisserie chicken and shred it to use for quick meals. Or make a big batch of shredded chicken and freeze it for later use.
The rest of the ingredients are pretty much pantry/fridge staples for me. With a little meal prep and planning ahead, you can have quick and easy lunches and dinners that aren’t boring – say goodbye to turkey sandwiches everyday. (Although I do love a good turkey sandwich!)

The best thing about a chicken burrito bowl is that there really is no wrong way to do it. I top the chicken burrito bowl with lettuce, cilantro, and baked beans but it would be great with any assortment of toppings. Here are a few suggestions:
- cheese (duh)
- crispy bacon (again, duh.)
- jalapeno slices if you like things spicy
- coleslaw
- sliced green onions
- sour cream to cool things down a bit
- sliced red cabbage
- French fried onions
- pickled red onions
- or, you know, all of the above

BBQ Chicken Burrito Bowls
These BBQ Chicken Burrito Bowls make the perfect quick and easy lunch – and they are far from boring! Use my topping suggestions to avoid a trip to the grocery store.
Ingredients
- 1 teaspoon olive oil
- 1 small onion, sliced thin (or about 1/2 cup of sliced onion)
- 1/2 red bell pepper, sliced thin (about 3/4 cup)
- 1 cup shredded cooked chicken
- 2 tablespoons JayD’s Barbecue Sauce, or your favorite BBQ sauce
- 1 cup rice, warm (I like brown)
- Toppings: lettuce, cilantro, baked beans (about 1/2 cup) and additional BBQ sauce
Instructions
- In a medium saucepan over medium-high heat, heat oil until hot. Add onion and red bell pepper and season with salt and pepper.
- Cook, stirring frequently, until onions are translucent (or however you like them!). Add chicken and bbq sauce and continue to cook until heated through.
- Serve over rice with desired toppings.

Husband’s take: It disappeared quickly! I was a little worried it might have too much going on for him (beans, chicken, etc.), but he loves it!
Changes I would make: None are necessary, but don’t forget to have fun with toppings!
