Garlic Butter Steak Bites
Fast cooking. Because steak benefits from a fast cooking time over high heat, these steak bites take just 10 minutes to cook, with only 5 to 10 minutes of prep time. The high heat in the skillet sears (and seals) in all the juices, and the short cooking time ensures that these steak bites are melt-in-your-mouth tender. No tough steak here!

Ingredient Notes
- Sirloin Steak: Cut the steak into bite-sized pieces. The idea here is to cut the steak before cooking so you don’t have to cut it on the plate! The steak is seasoned simply with kosher salt and black pepper. They’re seared in olive oil (or any cooking oil you like).
- Garlic Butter Sauce: Unsalted butter is melted into the steak juices in the skillet. You’ll add fresh minced garlic, dried rosemary, and fresh parsley to make a pretty amazing garlic sauce for the steak bites.
What kind of steak to buy
Sirloin steak is usually one of the more affordable types of steak and it has a good amount of flavor and tenderness. Ribeye or strip steak are two additional options for making steak bites.

How to make Steak Bites
Prep steak. Cut the steak into bite-sized cubes and season the cubes with with salt and pepper, to taste.


Sauté steak. Heat a large heavy-bottomed skillet over medium-high heat, then add the oil and swirl to coat. Add the steak bites to the pan in an even layer. Don’t overcrowd the pan. The steak bites should be in a single layer with a little space between. Sear the steak in batches if necessary.

Cook without stirring for 3 minutes, then stir and cook for 3 to 4 minutes more.


Remove steak from skillet. Transfer the steak bites to a plate and tent them with foil to keep warm.
Cook sauce. Return the pan to the stovetop and reduce the heat to medium-low. Add the butter, garlic, and rosemary and sauté for a minute or two, or until the garlic is fragrant and the butter has melted.


Finish. Turn off the heat, then return the steak bites to the pan and toss them in the garlic butter. Season to taste, add parsley, and serve.


Helpful Tips
- Choose the right size skillet. It’s best if the steak bites aren’t crowded. They should be in a single layer with a little space between each piece. If necessary, sear the steak in batches.
- Make sure the pan is hot before adding the steak. This initial sear from adding the steak to a sizzling hot pan is what locks the juices in and keeps the steak bites tender.
- Know when they’re done. For medium-rare steak bites, cook them until they’re browned on the outside, but still slightly pink in the center. If you’re using an instant-read thermometer, the internal temperature should be 130 to 135°F.

Garlic Butter Steak Bites

Ingredients
- 1 ½ pounds sirloin steak (rib eye or strip steak would work, too)
- ½ teaspoon kosher salt (more if desired)
- ½ teaspoon coarse ground black pepper (more if desired)

- 4 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 1 teaspoon dried crushed rosemary (or fresh rosemary)
- 2 tablespoons minced fresh parsley
Instructions
- Cut the steak into bite-sized cubes, about ¾ inches. Season the cubes with salt and pepper.1 ½ pounds sirloin steak, ½ teaspoon kosher salt, ½ teaspoon coarse ground black pepper
- Heat a large heavy-bottomed skillet over medium-high heat. When hot, add oil and swirl pan to coat bottom of pan with oil.1 tablespoon olive oil
- Add steak bites in an even single layer to the hot skillet (see note). Cook without stirring for 3 minutes. Stir and continue to cook for 3 to 4 minutes, stirring occasionally, or until the steak bites reach desired level of doneness. For medium-rare, cook them until they are browned on the outside but still slightly pink in the center (internal temperature of 130 to 135°F). Adjust the cooking time based on your preference.
- Transfer steak bites to a plate and tent with foil to keep warm. (The internal temperature will continue to rise a few degrees.)
- Return pan to stove and reduce heat to medium-low. Add butter, garlic, and rosemary. Heat until butter is melted and garlic is fragrant, 1 to 2 minutes.4 tablespoons unsalted butter, 4 cloves garlic, 1 teaspoon dried crushed rosemary
- Turn off heat, return steak to pan, and toss to coat in garlic butter. Taste and season with additional salt and pepper, if desired. Sprinkle with parsley and serve immediately.2 tablespoons minced fresh parsley
