Raspberry Mango Coconut Water Smoothie
I don’t know about you, but I’m already ready for this winter to be over and done with. I’m ready to head to the park in jeans and a short sleeve shirt. I’m ready for flip-flops. I’m ready to get my sweat on outside instead of inside of a smelly gym while my children are supervised by a (I’m sure very underpaid) childcare worker who reallllly looks like she doesn’t want to be there. I mean, c’mon — she gets to play with my darling children and I’m the one busting a sweat on the elliptical. What’s her problem?
Who wouldn’t want to spend their day with those two?! Moving on — I’m going to pretend warmer weather is already here and sip on a cool and refreshing smoothie.
It’s so packed full of crisp and bright flavors, thanks mainly to raspberry and mango. But really the key here is fresh ginger. The ginger really livens things up and makes it super refreshing and energizing. I, of course, snuck in a little spinach, but you could also use kale. And then to thin this out and make this smoothie material, I used coconut water. I was going for really light and cool, but if you’re not a fan of coconut water you could easily just use plain water or even your favorite kind of milk. I was aiming for more of the snack type beverage rather than a meal-replacement smoothie.
And let me tell you, this was a hit with the whole family. I don’t know if it was the cute straws or the miniature mason jars, but E, N, and Ben all loved this smoothie. Oh yeah — so did I! Ben was a little iffy on the ginger (it’s not his favorite) but he still drank it without any issues. Kids loved it too! Always nice with little man N eats something, he is unfortunately Mr. Picky Pants.
This recipe would be perfect after a long day in the hot sun, but it is also great for people like me who are just pretending they are on a tropical beach somewhere.
- 1 cup frozen raspberries
- 1 banana
- 1 (or more) cups coconut water
- 1/2 teaspoon fresh minced ginger
- 2 tablespoons ground flax seed
- 1 cup spinach
- 1 cup frozen (or fresh) diced mango
- In a blender, mix together raspberries, blend together all ingredients. Add more coconut water as needed to achieve desired consistency.
- Serve immediately.

Verdict: Love this — definitely a regular in my blender.
Husband’s take: “A little too gingery.” But the kids loved it. Oh, and Ben totally drank it too.
Changes I would make: None are necessary but feel free to experiment with different fruits.
Difficulty: Beyond easy.
