I really wanted to hurry up and post this recipe soon after the pancake party because I wanted to get it on here before the fresh blueberries are out of season! This is one of my all-time favorite summer desserts. Cool, refreshing and flavorful. And healthy ’cause it is pretty much all fruit. Good enough for this pregnant lady! I love how the fresh blueberries almost pop in your mouth with every bite. You’ll love this pie. I promise.

My mother-in-law deemed this “one of the best pies she has ever had.” Quite the compliment! My husband liked it too and my daughter? Oh my oh my.

“Blue blues! Blue blues! Blue blues!” Is what comes out of her mouth every times she even SEES a blueberry. She loves them. Can’t get enough of them. Needless to say, she was all about this pie. If you were eating this pie, I can guarantee there was a cute little almost-two-year-old hanging out near you begging…saying “pwwweesse, blue blues!” 

Just try to resist that.

Fresh Blueberry Pie

Take advantage of blueberry season with this fresh blueberry pie.

Ingredients:

  • 1 refrigerated pie crust (or your own recipe if you prefer!)
  • 6 cups fresh blueberries
  • 1 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup water
  • 6 tablespoons cornstarch
  • 2 tablespoons unsalted butter
  • 2 tablespoons fresh lemon juice
  • whipped cream (optional)–I whipped my own with just a touch of sugar since the pie is very sweet.

Directions:

  1. Cook the pie crust as directed on the package for a single crust pie. Cool completely before adding filling
  2. Meanwhile, Wash the blueberries and pick out any duds and any stems.
  3. Combine 3 cups of blueberries, sugar, salt and cornstarch in a medium to large-sized saucepan (you’ll be adding everything else to the same pan later). Pour in the water. Mix together and cook ever medium-high heat. Cook until the mixture comes to a boil, and then continue to cook for two minutes. You want it to get super thick and for your blueberries to start breaking down.
  4. Finish this mixture by adding butter and lemon juice. Cool before adding the fresh blueberries. You want them to stay plump and fresh!. When mixture has cooled, fold in the remaining 3 cups of berries. Pour into cooled, prepared crust.
  5. Chill for at least 2-3 hours before serving with whipped cream.

Verdict: Love this recipe. It one of those that is going to HAVE to be made every year.
Husband’s take: He also loved this pie. This one was a hit all around.
Changes I would make: None! No way!
Difficulty: Easy. The hardest part is waiting for it to cool and set up in the fridge.

  1. Blueberry pie would be my all time favorite pie. I grew up on wild blueberries in Maine and pie for breakfast was common. Your pie is beautiful!

  10. Gorgeous! My girls love blueberries too, so they would devour this pie. As a mom of little ones, all I can think about is how I would make them take their shirts off to eat it (I’m kind of obsessed with trying to prevent stains). This pie looks so good that it would probably be worth getting a stain to eat it (a little one, maybe).

  13. Absolutely wonderful! I use 2 crusts just because that’s what my family likes. There is nothing in the world like a fresh blueberry pie! Our season ends early down here in Florida, but we always pick plenty to go in the freezer.

  29. I just made this. I feel like my pie filling isn’t standing up as well as yours. I did make my own graham cracker crust though which is heavenly. Where do you find corn starch at the store? I can only find corn meal…

    • Hi Ley!
      The cornstarch is of utmost importance in this pie setting up. Otherwise it will just be a big juicy mess. Cornstarch is typically found in the baking aisle of most supermarkets. Common brands are ARGO or Clabber Girl, both which happen to be in yellow/blue containers. There is usually a store brand as well. Good luck!

  32. I’ve never had cold blueberry pie. No self control I guess ;)

    I love to make blueberries with cinnamon, vanilla and red wine, like a good merlot or cabernet sauvignon. They taste AMAZING cooked in spices, butter and red wine. Its hard to go wrong with blueberries though.

  36. This was pretty good but too salty and too much lemon juice for me. I think a 1/4tsp of salt would be good for me. ;) it was better the next day too. Set up more where when I sliced it it stayed together better. Maybe I needed a bit more cornstarch as I cooked for the amount of time stated. Good pie though.

  38. This pie is amazing!! I’ve made it two summers in a row, and my husband and I can’t get enough of it. It tastes so fresh and flavorful. I use an almond meal crust for it which complements the blueberries nicely. Thank you for this wonderful recipe!

  39. I made this pie and was astonished at how I could slice right through it, without and oozing out of blueberries.  I had no sloppy mess, just one delicious pie! I am going to try this with mini cherry pies.
