Ginger Cinnamon Apple Chips (baked)

These ginger cinnamon apple chips are a perfect healthy snack for the entire family to enjoy. Easy to make which is great, because they’ll disappear quickly!

Snacks. The life of a toddler revolves around snacks. And it just so happens that I have two (very spirited) toddlers. I’m always on the search for something to feed my kids besides goldfish crackers and veggie straws.

These apple chips are super easy to make. If you have a mandoline, they are unbelievably simple. But all you really need is a nice sharp knife, a baking sheet, parchment paper and apples. I added ginger and cinnamon to this batch for an ultra-flavorful preparation.

You’ll want to use a nice firm apple for these. The Michigan Apple Committee sent me some amazing Jonagolds that were great for recipes like this and the Quinoa Apple Pancakes I made. But they were also phenomenal for eating straight out of the fridge. And of course I love that they came straight from my favorite mitten state. Home sweet home, you know?

Almost makes me excited for fall….almost. I’m okay with enjoying summer for juuuuuust a little bit longer.

By the way — we put an offer in on another house and it was accepted! If everything goes well with closing, we’ll be moving in late summer or early fall! Because life isn’t quiiiiiiiiite busy enough with Ben’s new job, E starting preschool, two blog trips this summer, and then of course all the normal business that surrounds having two toddlers, a blog, a job at the hospital….etc, etc, etc. You all know how it goes.

Anyways, I’m super excited about this next step in our life. God has been so good to us and I cannot wait to see what is next for our little family.

    I love the idea of making these from scratch. I make pumpkin dip and serve it with apple wedges, but I think these would be even better. So happy for you about the house. What an exciting time!
