Remember how I said I had a recipe to put those Greek meatballs on? Well, here it is. I feel like I’ve been eating a lot of junk lately…but really it’s probably just the late night popcorn. I can’t give the stuff up! I’m even considering leaving the stupid air-popper (it’s not really stupid, I actually love it very much) at my parents or in-laws. I have a problem with self-control around popcorn…popcorn and butter. Popcorn, butter and salt. Why is it such a magical 9PM snack?

And yes, 9PM is my late night snack. I’m old.

Moral of the story is that I need to lock in on some healthier meals. Like this cucumber noodle bowl. It’s ridiculously easy to make and super flexible, just like almost all of my recipes.

I use my Inspiralizer to make the fun cucumber noodles but you can also make ribbons using a vegetable peeler or you can just chop the dang things and throw them in the bowl. I’ll let you in on a secret: it will pretty much taste the same.

However, if you have a spiralizer and enjoy making those beautiful, healthy veggie noodles, here’s another recipe you might enjoy: Zucchini Noodle Salad with Beans, Feta, and Lemon.  You may enjoy some of the same Mediterranean flavors in this Greek Pasta Salad with Feta and Beans or  Greek Chopped Salad recipe.

On top of the noodles, I highly recommend the meatballs (obviously) and the tzatziki (more on that in a minute), but then the rest is kind of up to you. I like feta cheese, chickpeas, red onion, tomatoes and kalamata olives. If I’m being 100% honest with you guys (I always am), I usually pick off the olives before I eat this. I don’t love them. I could drink olive oil, but I don’t love olives. Kinda weird, right? 

Tip: Try giving the cut onions a soak in ice water for 10-15 minutes before using them (swirl them around once or twice). This takes the harshness out of the onions. I do this often in recipes that I’m serving to a crowd like this orzo pasta salad or healthy broccoli salad.

 

The tzatziki ties everything together. It’s made with Greek yogurt, it’s gluten-free, and it’s delicious on everything from carrot sticks, to sandwiches, to this cucumber noodle bowl. It’s easy to make your own homemade tzatziki.

This recipe, if you have the meatballs prepped, comes together in 10 minutes. It’s a meal-prepper’s dream come true.

Greek Cucumber Noodle Bowls with Turkey Meatballs are a fun and filling healthy lunch. Healthy eating doesn't have to be boring!

Ingredients

  • 1/2 English Cucumber, spiralized
  • 3-4 [Greek turkey meatballs]
  • 1/4 cup chickpeas (drained and rinsed)
  • 1 tablespoon crumbled reduced-fat feta cheese
  • 1 tablespoon sliced kalamata olives
  • thinly sliced red onion (as little or lot as you want!)
  • 4-5 grape tomatoes, halved
  • 2 tablespoons Sabra Classic Tzatziki Dip

Instructions

  • In a bowl, pile cucumber noodles. On top, add meatballs, chickpeas, feta, olives, onion, and tomatoes.
  • Top with Sabra Classic Tzatziki Dip and enjoy immediately.
