Flax Seed and Pepita Bread

Homemade flax seed and pepita bread is flavorful, crunchy, and easy to make in a breadmaker!
I’ll be the first to admit that I need some practice with baking with yeast.
King Arthur Flour and Red Star Yeast sent me some really great stuff to play around with, including plenty of flour, flax seed, flax meal, yeast, great loaf pans, an awesome bread knife, and a dough whisk. Have you ever tried a dough whisk? I’ll never use a spoon again!
I have a confession to make though. The dough whisk was not used for this bread. After a couple of failed attempts at bread and rolls, my frustration got the best of me. I walked to the closet and grabbed my bread machine.

Baby steps, folks. I’ll get there eventually. My mom said, “So you made the dough in the bread maker and baked it in the oven?”
Nope!
Into the bread maker the individual ingredients went, and out came this bread. It looked and tasted great.
Thankfully, both Red Star Yeast and King Arthur Flour have some great online resources that I’ve utilized since to help me master this skill.
In the comments section, there are lots of comments from people who did not use a bread machine, if you want some helpful tips.
The changes I made to the recipe include using white whole wheat flour instead of whole wheat bread flour, and substituting pepitas for sunflower seeds.

Ingredients
- 1 ⅓ cups water
- 2 tablespoons unsalted butter, softened
- 3 tablespoons honey
- 1 ½ cups bread flour
- 1 ⅓ cups white whole wheat flour
- 1 teaspoon salt
- 1 teaspoon active dry yeast
- ½ cup flax seeds
- ½ cup pepitas (shelled pumpkin seeds)
Instructions
- Put all ingredients (except pepitas) into the pan of your bread machine in the order recommended in the manual.
- Select basic white cycle and press start. When the timer beeps during the knead cycle, add pepitas.
- Smell the wonderful scent of bread baking, and don’t stress about it, because it is going to turn out beautifully.
- Allow to cool before slicing. Tastes great toasted!
Notes
- Substitute sunflower seeds for pepitas, if desired.

Verdict: Love this stuff! It tastes great toasted and also tastes so delicious fresh out of the bread maker.
Husband’s take: I told him it has flax seeds and pepitas in it and he looked at me and said, “Why did you have to tell me that?” However, he still tried it (shocking!) and when I asked him if he liked it, he said, “Yeah, I actually do! It is really filling.”
Changes I would make: None.
Difficulty: If you use a bread machine, it doesn’t get much easier.

Your bread looks delicious. I have confidence you can make bread without the machine. As my husband and I have stated, there is no bad bread (when we’ve had bread that hasn’t risen, looks funny, etc)

I like the photos of your bread, it looks awesome. I like a stout wheaty bread that is full of little seeds and crunchies. Toast is one of my favorite snacks. I’ve recently started to make jelly from fruits in my garden and top the toast with it and some honey.
