Add some pizzazz to your summer! Blueberry mint iced tea is a refreshing take on plain iced tea with blueberry puree and mint simple syrup.
A drink like this epitomizes summer. Fresh mint, flavorful blueberries, and icy cold tea. I haven’t always loved iced tea, but I’ve really been craving it this summer. Iced tea is so refreshing on these insanely warm days that we have been having.
This iced tea starts with a mint simple syrup. If you have mint in your garden, this is a perfect use for it. Simple syrup is easy to make. It’s merely liquified sugar that stirs well into drinks, especially cold drinks. Don’t you hate it when you sweeten your iced tea and the sugar granules just sit on the bottom undissolved?
To make simple syrup, simply stir together 1 cup of water with 1 cup of sugar in a small saucepan. Since we’re making mint simple syrup, add a cup of mint leaves. Cook until the sugar is dissolved, cool, and strain. You can do this step up to a week in advance. Store the simple syrup in a glass jar in the fridge. It’s perfect for all sorts of refreshing summer drinks.
Next, puree a cup of blueberries with a couple cups of water. Press the puree through a strainer so you’re left with a beautiful bluish-purple juice. You can make your own iced tea using cold brew teabags, regular teabags, or just buy a container of pre-made iced tea (unsweetened).
When you’re ready to serve, stir the blueberry puree into the iced tea, along with mint simple syrup to taste, lots of ice, and enjoy! You can stir up a whole pitcher or make one drink at a time.

For the Mint Simple Syrup
- 1 cup water
- 1 cup sugar
- 1 cup loosely packed mint leaves, roughly chopped
For the Blueberry Puree
- 2 cups fresh blueberries, washed
- 8 oz. cold water
For the Iced Tea
- 32 oz cold water
- 4 cold brew tea bags
Mint Simple Syrup:
- Combine water, sugar, and mint in a small saucepan over medium heat. Bring to a boil, stirring occasionally. Continue to boil for a 2-3 minutes until sugar is all dissolved.
- Remove from heat. When slightly cooled, pour through a strainer to remove the mint leaves.
- Note: Unless you like your iced tea really sweet, you probably won't be using all of the simple syrup. Use leftover syrup for other cool summer drinks.
- Blueberry Puree
- Meanwhile, purée 2 cups of blueberries with one cup water in a food processor. Strain mixture through a fine mesh strainer so you have a thin(ish) juice.
- Iced Tea
- Prepare the iced tea using 32 oz. (or more) of cold water and 4 (or more) cold brew tea bags. You can also make iced tea with regular tea bags if that's what you have. The cold brew type just speed things up a bit. Or buy a bottle of unsweetened iced tea.
- Mix the blueberry purée, iced tea, and mint simple syrup, to taste, with plenty of ice. Stir, taste, add more simple syrup as needed, and enjoy!
- Make ahead tip: The mint simple syrup can be made a week or more in advance. Store it in a clear glass jar in the fridge. Make the blueberry puree in the morning and refrigerate, as well as the iced tea. Mix it all together when you're ready to serve.
- Substitute a bottle of pre-made unsweetened iced tea instead of brewing your own.
