Filled with your favorite fun sprinkles, every bite of these birthday cake pancakes is a celebration! These easy homemade pancakes are a great way to start that special day.

Instructions
Heat the griddle over medium to medium-low heat. If you're using an electric griddle, preheat it to 325ºF.
In a bowl, whisk together flour, sugar, baking powder, baking soda and salt.

In a separate bowl, using a whisk or fork, lightly beat eggs until combined. Add milk, almond extract, vanilla extract and melted butter; mix until well-combined.

Add the wet ingredients to the bowl containing the flour mixture. Stir well until the batter is fairly smooth. Don't overmix it; a few lumps are okay.
Lightly fold in sprinkles. Again, don't overmix the batter because the sprinkles may start to bleed color and turn the batter an unappetizing color.
4 to 5 tablespoons colored sprinkles, additional for serving
If your griddle is nonstick, you probably won't have to use butter or oil to fry the pancakes. If it isn't, grease the griddle, as desired. Pour about a quarter-cup of batter onto the hot griddle for each pancake. Flip the pancakes once they are bubbly on top and bottoms are lightly golden.
Serve the pancakes immediately with syrup, whipped cream, and additional sprinkles. Add a birthday candle if you like!

Match any occasion. Birthday cake pancakes are great for other celebrations, too. You can use themed sprinkles like star shapes for the Fourth of July or hearts for Valentine’s Day, and so on.
Make a "layered" cake. To give your pancakes a birthday cake feel, add an extra ¼ cup milk to thin the batter slightly. Layer the thinner pancakes with frosting and top with candles. You can cut your birthday cake pancakes into wedges like a cake.
Storage: Don’t be afraid to make extras! These pancakes can be stored in a zip-top freezer bag for up to 5 days in the refrigerator or 2 months in the freezer. Cool them on a wire rack; freeze them in a freezer-safe bag or container, separated by parchment paper. For best results, heat them in a toaster oven. You can pull out just a few for an impromptu party. If your kids are like mine, they like to have tea parties and birthday parties for dolls and stuffed animals and these cakes are perfect for imaginative play.
