Air fryer carrots have caramelized exteriors, crispy edges, and tender insides similar to oven-roasted carrots, but they're ready to eat in less than 15 minutes!
Trim the ends from the carrots. Scrub them well, or peel and rinse them. Pat dry with paper towels or a clean dish towel. Cut the carrots into ½ -inch slices (cut diagonally for a pretty presentation). Try to keep the slices fairly uniform so they cook evenly.
1 pound carrots
In a large bowl, toss the carrots with olive oil until they are well-coated. Sprinkle garlic powder, onion powder, dried thyme, paprika, salt, and black pepper over the carrots. Toss again to ensure even coating.

Place the seasoned carrots in a single layer in the air fryer basket. Avoid overcrowding to ensure even cooking.
Cook the carrots at 380°F in the air fryer for 12 to 14 minutes, shaking the basket or tossing the carrots halfway through the cooking time. Cook until the carrots are fork tender and lightly browned.
Check the carrots for doneness by inserting a fork. They should be tender but still have a bit of firmness.
Transfer the air-fried carrots to a serving plate. Garnish with chopped fresh parsley if desired.

We prefer whole carrots, peeled and sliced, but other types of carrots will work for this recipe.
For Baby Carrots: Use a 16 ounce bag of baby carrots. Dry VERY well with a lint-free kitchen towel or paper towels. Season and cook as directed above, increasing cook time as needed (our baby carrots took 22 minutes to become tender but size can vary so cooking time may be different).
For Frozen Carrots: Buy a 16 ounce bag of frozen crinkle cut carrot slices. Do not thaw. Increase olive oil to 2 tablespoons and season as directed above. Increase cooking time (our frozen carrots took 21 minutes).
Flavor Enhancements: The carrots can be seasoned any way you like. Try seasoning blends such as cajun seasoning or southwest spice blend; cinnamon , ginger, or a dash of nutmeg are tasty too. Add a tablespoon of maple syrup, brown sugar, or honey to the oil mixture for glazed air fryer carrots. Spicy hot honey is great, too. Garnish with any fresh herbs you happen to have on hand (chives, thyme, oregano, mint, etc.)
