Wash berries and halve or quarter the strawberries.
Add approximately 2 raspberries, 3 blueberries, and ½ strawberry to each ice cube tray cavity (makes 6 cubes, depending on size).
Top with water and place in freezer, until frozen.
For Each Wine Spritzer:
Fill a wine glass with frozen berry ice cubes, up to 3 cubes per glass, depending on the size of the cubes and the glass.
Pour 3 ounces chilled white wine into each glass and top with 1 ounce chilled club soda.
Notes
Fruit ice cubes: Combine any of your favorite fruits: blackberries, watermelon, peaches, etc.
Make ahead tip: Frozen berry cubes can be kept in the freezer for up to a month. To save time, freeze a double or triple batch of the cubes
Mixer choices: Instead of club soda, substitute mineral water, tonic water, seltzer, or even lemon-lime soda or ginger ale. Each has unique qualities that will affect the sweetness and flavor of the spritzer.
Yield: A 750 ml wine bottle = 25 fluid ounces, so you can get about 8 servings of this recipe out of one bottle of wine.
