Relish the deep caramel and vanilla notes of bourbon in a lighter bubbly cocktail, a vanilla bourbon fizz. A great sipper that's easy to make and very easy to drink!
4ouncesprosecco, or bubbly of your choice, chilled
Instructions
To a cocktail shaker filled with ice, add bourbon, simple syrup, and vanilla extract; shake vigorously for 15 seconds.
1 ½ ounces bourbon, ½ ounce simple syrup, ⅛ teaspoon pure vanilla extract, or more to taste
Strain into a chilled champagne flute or tall narrow glass, and top with prosecco.

Make vanilla simple syrup: Homemade vanilla simple syrup can be used in place of the simple syrup and vanilla extract. Add 1 cup water, 1 cup granulated sugar, and 1 teaspoon vanilla extract (or 2 vanilla beans split down the center) to a small saucepan and bring to a light simmer for 10 minutes. Then allow the syrup to cool to room temperature before discarding the beans (if using). Once the syrup is cool, you can use it for this cocktail or bottle it for later use. I usually store simple syrup in the refrigerator.
Lighten it up: For a lighter-tasting cocktail, add 6 oz. of prosecco instead of 4 oz. If you prefer a non-alcoholic cocktail, use NA bourbon and NA sparkling wine.
