1small bag (around 5.5 ounces) your favorite sweet potato chips
2cupscooked, diced chicken breasts
1/2cupcorn (either canned or frozen; if frozen, thawed out)
1/2cupblack beans, drained and rinsed
1 1/2cupsfreshly shredded Cheddar or Monterey Jack cheese
1/2cupyour favorite BBQ sauce
1/4cupnonfat plain Greek yogurt
handful cilantro to garnish
Preheat your oven to 350°F.
Layer 1/2 of the sweet potato chips on a baking sheet or cast iron skillet. Sprinkle with half of the chicken, corn, black beans and cheese. Add the remaining sweet potato chips, chicken, corn, black beans and cheese.
Place in the oven on the lower rack for 15 – 20 minutes or until cheese is melted.
Drizzle with the BBQ sauce, Greek yogurt and garnish with the cilantro.
