Mix all ingredients together. Taste and season with additional salt if desired.
2 cups finely diced tomatoes, seeds removed, ½ cup finely chopped red or white onion, 1 jalapeño pepper, seeds and ribs removed, finely chopped, ¼ cup chopped fresh cilantro leaves, 2 tablespoons lime juice, ¼ teaspoon kosher salt
Serve immediately, or for best results, let flavors meld for an hour before serving.

Like it spicier? Add more jalapeño peppers or leave in the seeds and ribs of the peppers.
Store in a covered container in the fridge for up to a week.
