This cucumber lime cooler is the refreshing mocktail your summer party needs! Crisp and hydrating, it also has options to make it a cocktail if you prefer.
Add cucumber slices to the bottom of a glass. Gently muddle with a spoon or muddler, until lightly crushed. You can also add fresh mint and muddle it along with the cucumber, if you want. Try not to mash the cucumber too much; you don't want bits and pieces of it floating in your mocktail.
Fill the glass with ice. Top with sparkling water and stir gently to combine.
½ cup cold sparkling water or club soda
Garnish with additional cucumber slices and fresh mint leaves or sprigs, if desired. Serve immediately.

Cocktail option: Add 1 to 2 ounces of gin, vodka, or white rum when you add the lime juice and simple syrup. (If you add 2 ounces gin, the cocktail will have 183 calories.)
How to make simple syrup: In a small saucepan, combine 1 cup sugar and 1 cup water. Bring to a boil, then lower the heat and simmer for 5 minutes. Cool, then refrigerate until ready to use. This will make enough for 24 mocktails, depending on how much you add to your mocktails. The simple syrup will keep for up to a month in the refrigerator.. You can easily decrease or increase the recipe.
Garnishes: You can try other fresh herbs for the garnish. Mint gives the cocktail a mojito vibe but basil, lemon balm, cilantro, lemongrass, or thyme are fun to try, too!
Make a pitcher (serves 6):
2 cups thinly sliced cucumber
½ cup fresh lime juice
2 to 3 tablespoons simple syrup
3 cups sparkling water (add just before serving)
Muddle cucumber with lime juice and simple syrup in a pitcher. Add ice and sparkling water just before serving. Stir lightly. Serve each mocktail garnished with a cucumber slice and fresh mint leaves, if desired.
