Festive red and green funfetti shortbread cookies will be a happy addition to your Christmas cookie collection! Change the color to match any occasion.
¼ cupred and green sprinkles (jimmies)(or any color you want)
⅓ cupred and green sugar for decorating(or any color you want)
Instructions
In a stand mixer using the paddle attachment, combine butter, confectioners' sugar, vanilla and salt; blend until smooth and fluffy. You can also use a hand mixer.
Add flour gradually and mix on low until just combined. Stir the flour in by hand if you're using a hand mixer. Stir in jimmies using a spoon or your hands.
Form dough into a 12- to 14-inch-long round log, wrap in plastic wrap and freeze until firm, at least 30 minutes. If you prefer, the dough can be refrigerated overnight instead.
Preheat oven to 350°F. Prepare baking sheets by lining with parchment paper.
Cut dough into ¼ inch thick slices. Roll edges in red and green sugar.
Bake for 15 to 18 minutes or until cookies are light golden brown around the edges. Cool for a few minutes on baking sheets before removing cookies to wire racks to cool completely.
Notes
Make Ahead: The best part about these cookies (other than how delicious they are) is that you can make them in advance. Refrigerate or freeze the dough; slice and bake the cookies when you need them.
Replace the red and green jimmies and colored sugar with any color you like, depending on the occasion.
If you prefer, you can make the cookies with just the jimmies and not the colored sugar, or vice versa. Or, you can make them without either.
