In a stand mixer, combine butter and sugar and mix on medium speed until combined and light in color. Add vanilla and egg and beat again until combined.
In a medium bowl, mix together flour, cinnamon, salt, baking powder and baking soda.
Add dry ingredients to wet ingredients and mix until just combined. Stir in cinnamon chips by hand.
Roll into small balls (1 to 2 tablespoons each) and then roll the balls in powdered sugar until coated. Place on a parchment paper lined baking sheet.
Bake for 9 to 11 minutes or until no longer shiny. For best resutls, don’t overbake the cookies. They're best when they're chewy.
Cool for 5 minutes on the baking sheet before removing the cookies to a wire rack to cool completely. Store in an airtight container.
Notes
If you prefer, substitute chocolate chips or white chocolate chips for the cinnamon chips.
The cookies can be rolled in granulated white sugar or cinnamon sugar for variation.
