4cupsseedless watermelon, cubed and frozen for at least 24 hours(see note)
¼cupwater
2tablespoonsfresh lime juice(from 1 lime)
2tablespoonshoney, or to taste(substitute sugar if desired)
Fresh mint leaves for garnish(optional)
Lime slices for garnish(optional)
Instructions
Place the frozen watermelon, water, lime juice, and honey in a blender.
Blend on high speed until all the ingredients are fully combined and the mixture becomes slushy and smooth.
Taste the mixture and adjust the sweetness with more honey (or sugar) if needed. If it’s too thin, add a few ice cubes and blend again. If it’s too thick, add a little water and blend again.
Serve immediately garnished with a sprig of fresh mint and a slice of lime.
Notes
How to freeze watermelon: To keep the watermelon cubes from freezing into one solid mass, arrange them in a single layer, sides not touching as much as possible, on a parchment-lined baking sheet. Freeze until the cubes are solid and then transfer to an airtight container or freezer bag until ready to use.T
Try different fruit combos: Substitute frozen strawberries, blueberries, peaches, mango, or another fruit of your choice for a portion of the watermelon.
Make it a cocktail: Add chilled vodka, white (silver) rum, or white tequila (silver or blanco), to taste.
