Instructions
Butter one side of each slice of bread with softened butter. Heat skillet or griddle over medium heat.
Spread pizza sauce on the unbuttered side of one slice. Add 3 tablespoons of the shredded mozzarella (or 1 slice) and arrange the pepperoni slices on the cheese. Top with the remaining mozzarella cheese. Place the other slice of bread on top of the cheese with the buttered side facing out.
On one buttered side, spread 1 tablespoon grated parmesan cheese and press down gently to adhere. Place the sandwich, cheese side down, in heated skillet or griddle. Top the other buttered side (should be face up in the pan) with the rest of the parmesan cheese.
Cook for 4 to 6 minutes on each side or until golden brown and cheese on the inside is melted. Enjoy immediately.

Measurements are approximate and will vary based on size of bread.
Sliced mozzarella cheese can be used in place of shredded.
Feel free to substitute pizza toppings of your choice for the pepperoni.
