Kale Salad with Avocado and Cumin Lime Dressing
This kale salad with avocado has a great southwestern twist and is full of flavor and bright green hues. Salads don’t have to be boring!

Ingredients
1/4
cup
freshly squeezed lime juice (about 1 lime)

tablespoons
honey
1/2
teaspoon
cumin
2
tablespoons
finely chopped cilantro
1/3
cup
olive oil
1
small bunch of kale leaves, torn or cut into bite-sized pieces (about 4 tightly packed cups)

cups
shredded green cabbage

scallions, thinly sliced

cups
cooked and cooled quinoa
1
large avocado, diced
Instructions
In a large mixing bowl, whisk together olive oil, lime juice, honey, cilantro, and cumin.
Add in remaining ingredients and toss with dressing. Serve immediately or store in fridge, tightly covered.
Notes
If not serving immediately, add avocado immediately prior to serving.
