This pizza quesadilla recipe is every busy parents' dream! A kid-friendly lunch or dinner option filled with melty mozzarella, pizza sauce, and pepperoni, this easy recipe is ready to be devoured in just 10 minutes.
2tablespoonspizza sauce, more for dipping, if desired
½cupshredded mozzarella cheese
10pepperoni slices, more as desired
oil for frying
Instructions
Preheat large skillet over medium heat. Meanwhile, prepare quesadilla. Spread pizza sauce evenly over half of the tortilla. Sprinkle mozzarella cheese evenly over sauce, arrange pepperoni slices on cheese. Fold tortilla over, pressing down lightly.
Spray heated skillet with olive oil spray or add approximately 1 teaspoon olive oil to the pan. Carefully transfer quesadilla to the hot pan. Cook for 2 to 3 minutes on one side, or until browned; carefully flip over, and cook 1 to 2 minutes longer, until golden brown.
Remove from pan, let quesadilla cool for 1 to 2 minutes before cutting into quarters.
Notes
Make as many quesadillas as you like. Cook them individually. Once the pan is hot, the quesadillas cook pretty quickly.
Change them up. You can add any pizza fillings you like! If you don't want raw vegetables in your quesadilla, give them a quick sauté in a pan to soften and release moisture.
Air fryer quesadillas: Spray both sides with oil or cooking spray, then place the quesadilla in the air fryer basket and cook at 375ºF for 5 to 7 minutes, or until the outside is crispy and the cheese melts.
