Mac and cheese pizza might just be the most kid-pleasing dinner of all time! Who needs sauce and mozzarella when you can top your pizza with creamy macaroni and cheese?
Optional toppings: cooked crumbled bacon (3 to 4 strips), sliced green onions, toasted bread crumbs, chopped parsley
Instructions
To make macaroni and cheese:
Cook the pasta according to the package instructions in a large pot of salted boiling water. Drain and set aside.
In the same pot, melt the butter over medium heat. Add the flour and whisk continuously for 1 to 2 minutes, until smooth and bubbly, to make a roux.
Gradually stir in the milk, whisking constantly to avoid lumps. Cook the mixture until it thickens, about 5 to 7 minutes. Reduce the heat to low, and slowly add the cheddar cheese. Stir until the cheese is melted and the sauce is smooth. Stir in the Dijon mustard (if using), salt and pepper.
Add the cooked pasta to the cheese sauce, tossing until the pasta is well coated.
To make pizza:
Preheat oven to 400°F. Grease a 10 x 14 inch rimmed baking sheet with 1 tablespoon olive oil. Spread dough out in pan as evenly as possible. Bake crust for 10 minutes.
Remove crust from oven. Top pre-baked crust evenly with 6 cups cooked macaroni and cheese. Top with 1 cup shredded cheese and cooked crumbled bacon, if desired..
Bake for 12 minutes or until crust is golden brown and cheese is melted. Garnish with sliced green onions or chopped parsley, if desired. Serve hot.
Notes
For the smoothest sauce, shred your own cheese instead of buying bagged shredded cheese.
You can substitute commercially prepared mac and cheese, if desired. Choose a creamy homestyle mac and cheese. You’ll need 6 cups.
