Lasagna Soup Recipe With Turkey Italian Sausage

A distinctive soup !

This lasagna soup recipe is a little easier on the waistline than traditional lasagna.

• Olive Oil • Onion • Red Bell Pepper • Italian Turkey Sausage • Mushrooms • Garlic • Spinach • Tomato Paste • Tomatoes • Oregano

Ingredients

With less cheese, less pasta, and more vegetables, it’s just a better choice if you’re watching what you eat. I also use turkey Italian sausage to slim down the calorie count even a little more.

Why you’ll love it

Love lasagna but hate making all those layers? You’re not alone. You’re going to adore this lasagna soup recipe. It gives you the comfort that only lasagna can…but without the stress.

In a large pan, heat oil over medium-high heat. Add onions, pepper, and turkey sausage. Cook, breaking up sausage, until onions are translucent and sausage is cooked through. Remove to a bowl.

1

Place the pot back on the heat; add mushrooms. Cook until browned and then add meat back in along with garlic and spinach. Cook until spinach is wilted and garlic is fragrant.

2

Stir in tomato paste until combined. Add tomatoes, oregano, parsley, basil, and broth. Bring to a boil and reduce to a simmer.

3

While soup is simmering, cook pasta according to package directions. When cooked, drain and add to soup immediately prior to serving.
