Mini Patriotic Fruit Tarts – EASY!

These mini patriotic fruit tarts are beautiful, easy to make, and a refreshing treat for Memorial Day, Independence Day, or ANY day!

With Memorial Day right around the corner, it’s time to plan out some fun patriotic eats to help remember those who died serving our country. Our country wouldn’t be what it is today without the sacrifices of these brave men, women, and their families.
Buuuuut this whole warm weather thing has me in the DON’T MAKE ME COOK kind of mood. Yes, that happens. Even to food bloggers. More often than I’d like to admit.
So what do you do when you don’t want to cook but you definitely want to eat? Find EASY and fun recipes. Easy because you want to get it over with quickly, but fun because you still want to enjoy the great food — especially if it’s patriotic themed for Memorial Day.
Easy is also important for those who attend or walk in parades on Memorial Day. I haven’t been to a Memorial Day parade in a long time – my job as a (very) part-time physical therapist usually has me working in the hospital on Memorial Day. Ben has mentioned walking in a parade in his uniform, maybe this will be the year we finally do it.
This recipe is great for easy entertaining because you can mix up the fruit mixture (shall we call it a fruit salsa?) and then just scoop it into the pre-baked phyllo dough shells. I love to keep a couple boxes of the phyllo shells in my freezer for quick entertaining.

The fruit mixture is enhanced with lime zest and lime juice. That tartness is balanced out by Stevia In The Raw®.
Stevia In The Raw is a zero-calorie sweetener and is part of the In The Raw® family of sweeteners which also includes Sugar In The Raw®, Agave In The Raw® and Monk Fruit In The Raw®. The Stevia In The Raw Bakers Bag measures cup-for-cup like sugar so it’s a great way to reduce calories in baking as well as in small amounts like in this recipe. If you decide to bake with Stevia In The Raw Bakers Bag, start by using ½ sugar, ½ Stevia In The Raw zero calorie sweetener. For example, if the recipe calls for 1 cup sugar, use ½ cup Stevia In The Raw and ½ cup sugar to ensure proper rising and browning.
One other thing to note about this recipe is the white element of the patriotic colors of red, white, and blue. It’s jicama!
Jicama (pronounced HEE-kah-ma) is a hidden gem that not enough people know about. This root vegetable is ultra-crisp, with a slightly sweet and nutty flavor, and is a nutritious addition to many recipes. I love it in this fruit salsa but it’s also great in savory salads or cut up in “fries” for dipping in hummus or any other dip you love.

Ingredients
- 1 teaspoon lime zest
- 1 cup small diced fresh strawberries
- 1 cup fresh blueberries
- 3/4 cup small diced jicama
- 1 tablespoon fresh lime juice
- 1 teaspoon Stevia In The Raw
- 12-15 mini phyllo shells
Instructions
- In a medium-sized mixing bowl, combine all ingredients except phyllo shells. Taste and add more Stevia In The Raw if desired.
- Scoop into mini phyllo shells immediately prior to serving.
Notes
- Substitute other fruits if desired.
