{a day in the life} Someday I’ll Learn

Today’s “a day in the life” is Chelsea of Someday I’ll Learn. Chelsea is a fellow FP Insider so I had the pleasure of meeting her and spending time with her in New York when I traveled to the Fisher-Price headquarters. Chelsea does it all – blogs, cooks, raises kids AND animals, and even crafts. And she’s expecting baby #3. Color me impressed. Enjoy getting to know Chelsea!

Tell me about yourself and how you started food blogging.
I started blogging in 2009 as a way to keep my friends and family updated after moving to San Diego. Nate and I were recently engaged so I talked a lot about wedding planning and then eventually about figuring out how to cook, clean and parent. A lot of our readers in similar life phases stumbled upon us on Google, and it’s been amazing to hear about their families growing up along with ours.
Take me through your day.
5:00 AM: Wake up, throw on some coffee.
5:30 AM: Write a blog post.
6:45 AM: Shower.
7:00 AM: My preschooler and toddler wake up and I get them dressed.
7:30 AM: Make breakfast.
8:00 AM: Lighting is good in the kitchen, so I try to create and photograph a craft or recipe with the boys.
9:00 AM: Clean up around the house.
10:00 AM: Watch Dinosaur Train or Thomas with the boys.
11:00 AM: Feed the chickens, dogs and goats.
12:00 PM: Make lunch.
1:00 PM: Play with toys.
2:00 PM: Naptime for the boys while I respond to emails and work.
4:00 PM: Outdoor playtime.
5:00 PM: Make dinner.
6:00 PM: Bath, book, prayers.
7:00 PM: Bedtime for the boys.
7:15 PM: Work until 11:00 PM and go to bed.
What is your one must-have kitchen tool or gadget?
I have a HUGE cutting board (over 3 feet wide) that I had custom cut at a restaurant supply store. I can prep a whole meal on it without dirtying any surfaces in my kitchen, and it fits perfectly in my sink for easy cleanup.
What is your favorite part of your day? Why?
Feeding the goats and chickens. The goats have hilarious personalities, and I love that I am teaching my sons about responsibility as well as where our food comes from.
If you could choose one room in your house to spend the WHOLE day in, which room would it be? Why?
My office. I have a huge built-in cabinet with all of my craft stuff and lighting for photography, as well as a big lofted bed that is the most comfortable thing on the planet. The boys aren’t allowed in there, so it’s the one place in my house that’s always pristine and I know I won’t step on any rogue Duplo blocks.
What is your favorite day of the week? Why?
Sunday. My husband has a crazy schedule, but this is the one day per week that he and I both make a point to be home and do nothing but hang out with the family.
If you had to choose one place to travel to every year, where would it be? Why? Have you been there before?
Alaska, just as the snow starts to melt in spring. We live in San Diego so we like to visit places that are different than what we’re used to. There’s a sweet little inn in Anchorage called The Puffin Inn with homemade waffles and a cozy lobby fireplace where everyone congregates like family, and it serves as an excellent home base to explore the surrounding area. We like to go ice fishing, photograph moose and walk along the Iditarod trail.
What is your favorite quote or verse?
Proverbs 4:25-26. “Let your eyes look directly forward, and your gaze be straight before you. Give careful thought to the paths for your feet and be steadfast in all your ways.”
What recipe on your blog are you most proud of?
Parmesan Mustard Zucchini Salad. Because I got my family to LOVE zucchini.
What recipe on your blog do your readers seem to love most?
Oma’s Spaghetti Sauce. It is SO simple, but it’s the perfect spaghetti sauce and I share how you can make 18 different meals with it.
What is your guilty food pleasure that you’re embarrassed to fess up to? Kraft Mac & Cheese? Spagetti-o’s? Canned cheese? We promise not to judge!
Oreos with peanut butter. Best late-night combo ever.
What have you learned since you began blogging?
Family is the most important thing. All of this content, all of the reader interaction and creating a business from the ground up…it would serve absolutely no purpose if it weren’t for my family.
What have you found to be the most challenging part of blogging?
Saying “no” to opportunities that are not a fit for me.
Do you have any advice for someone who is interested in cooking or food blogging?
Write about what you love, not what you think other people want to hear.
