About these Brownie Waffles

I almost feel bad posting this recipe because it’s barely a recipe…but it’s a brownie waffle! If you haven’t tried this, you must. No shame in my game — even right down to the brownies from a box. I swear, Ghirardelli brownies are the best around. Every time I make them for anything, I get a compliment on my delicious brownies.

Every. Single. Time.

And of course, I happily oblige.

“They’re Ghirardelli!!!” Again, absolutely no shame in my game. I own every shortcut I take. When they taste this good, who freakin’ cares if you didn’t get out a measuring cup for flour?

Ben’s exact words after trying one of these were, “These should be illegal.”

Good news–they aren’t! It’s as easy as whipping up the brownie mix (add in an extra egg!) and throw the batter in the waffle maker! In three minutes, you’re dining on the perfect brownie waffle — soft on the inside and crispy on the outside.

The hardest part is trying to decide how to top it! Whipped cream, sprinkles, strawberries, hot fudge, caramel sauce, ice cream….all of the above?

Ingredients 

  • 1 box brownie mix (I use Ghirardhelli Triple Chocolate for this recipe)
  • eggs, oil, and water, as directed on brownie mix box
  • 1 additional egg
  • desired toppings

Instructions 

  • Whisk together eggs, water, and oil until combined. Add brownie mix and mix until just combined.
  • Pour into preheated waffle maker and bake for 3 minutes or as directed on your waffle maker.
  • Remove and enjoy topped with fruit, whipped cream, or ice cream. Hot fudge would be good too, just sayin’. And sprinkles are always a good decision.

  • Makes about 3 large Belgian waffles, serves 6 (1/2 large waffle each).

    After reading previous reviews I made some minor adjustments. I used my mini Dash waffle iron (available on Amazon for about $10), added the extra egg as recommended as well as an extra tablespoon of oil and 2 tablespoons extra water, as I found the batter too thick to work with. I also cooked them slightly longer than the waffle iron indicated, as they were too soft to remove without falling apart and I like them a little crispy. My kids all thought they were great.
    I didn’t use cooking spray and I didn’t have trouble with the waffles themselves sticking, but there is definitely chocolate residue so the iron will need more cleanup than usually needed with traditional, basic waffles.

    My daughter made these today in our dash mini waffle maker. Yum! We preheated the waffle maker, sprayed both sides with nonstick spray and added about 1/4 cup of the brownie mix with the extra egg added closed the lid and let it cook until the steam slowed down cook longer if you want more crispy. Used a fork to lift from the edge and I have a very happy teen and a house that smells like brownies.

    These were delicious! I had no issue with them sticking or falling apart. I used a Belgium waffle maker. I set it on 4 and left them in for about 10 seconds after the ready light flashed. I would definitely make them again. Thanks for the recipe.

    Made these tonight and at first they were an epic fail! I had to use a spoon and try to get the brownie out so I was left with super crunchy brownie bits. Food usually doesn’t stick when it’s done, so I increased the cook time to around 6-7 mins and they came out perfect! My waffle maker heat setting was on 4 so that’s probably why it needed to cook longer. Higher heat setting and 3-4 mins would have probably been fine. 

    If yours are sticking then increase the heat or the cook time and it should make a perfect brownie waffle.

    This was a horrible recipe! It was so messy and almost impossible to get the brownie waffle out of my iron. Avoid, avoid, avoid!

      I’m so sorry to hear you had that experience! I’ve found that waffle irons vary a lot in terms of how nonstick they are.

    Epic fail! We have a really good waffle maker, and every attempt was disastrous, lol!  Spraying/not spraying…less batter/more batter…cook longer…nothing helped!  We ended up having to scrape and pick out the “waffle” each time.  We just had piles of brownie clumps, plopped a scooped of ice cream on top, and added some toppings.  Flavor was all there, but presentation was lack luster!

      I’ve never had that happen! Does your waffle iron have different heat settings? It sounds like it could have been turned up too high and maybe a lower temperature would be better?

    My only issue is that brownies don’t hold together so for each one you have to shout off the waffle maker so it can cool

    Made these last night for a dinner party of 10 people. Got my homemade vanilla bean icecream going in the machine, mixed up the same brownie mix as you (my favorite) and EPIC FAIL!!! No idea what I did wrong but they never formed into a waffle. I made the best of it and chopped them into pieces, put it on a plate, ice cream on top , covered in homemade ganache….Deconstructed dessert to the rescue! Any idea what might have been the issue as I definitely want to try them again. I greased the waffle iron well and let them go for 3 minutes on each side. Any feedback would be appreciated! Thanks

      Strange! I didn’t spray my waffle iron (it’s nearly brand new, and nonstick), but they still stuck a little. Did yours stick and break apart that way? Or maybe you didn’t put enough batter in to completely fill the waffle iron? When you say each side, did you try to flip them – is that necessary with the waffle iron you have? Sounds like you made the best of it though! Sorry it didn’t work out. :(

      PS: I’m craving ice cream and ganache big time now! Those two things can fix any wrongs.
