{a day in the life} In Katrina’s Kitchen

I love Tuesdays. I am enjoying learning about these bloggers so much! Today we have Katrina from In Katrina’s Kitchen.

Tell me about yourself and how you started food blogging.
I’m Katrina and I blog at In Katrina’s Kitchen. I’m a wife and a mom in a house full of boys who love to eat. I started blogging as a way to share some of my recipe creations with friends. I had no real plan in mind and I certainly didn’t know the scope of the food blogging world. I have found a wonderful, supportive community and have made some beautiful friendships along the way.
Take me through your day.
7:00-8:00 Wake up with my boys. Toddlers and preschoolers don’t observe weekends, holidays, or vacations so this is my wakeup time every day of my life from now until eternity. Ahem. If I wake up before they do I usually lay in bed and read or check my email.
8:00 Try to convince my 5 year old to eat something before school while also keeping my 2 year old from eating everything within reach. These two are like night and day. Breakfast is pretty simple most days since it’s early and I’m trying to press start on my coffee machine.
8:30 Take one kidlet to preschool (3x a week).
9:00 – 11:30 Run errands with my toddler, start laundry for the day, dance to the sounds of Yo Gabba Gabba, or publish a blog post. Since my oldest goes to preschool 3 mornings a week this time slot is very unpredictable. Sometimes I can even squeeze a jog in there if Daddy or Grandma is available to entertain our youngest. I’m training to run my first 5k {this weekend!!!!!} so I try to run at least 3 days a week.
11:30 Pick up oldest kidlet from school with snack in hand. His metabolism apparently wakes up at 10:27 every morning and by the time I pick him up he is no longer able to function properly unless fueled by graham crackers and fruit snacks.
12:00 – 1:00 The craziest time of my day when I try to get lunch to the hungry masses before the meltdowns begin. Playtime after lunch usually involves me saving Batman from the hands of Yoda all while crashing Hot Wheels and putting together myriads of puzzles.
1:00 – 3:00 Naptime for my youngest. Thankfully he is a good napper and he loves his sleep. You can usually find him passed out in his rocking chair with a book in hand…or a pile of books on the floor. I use this time to make something yummy with my oldest guy or play games with him. He’s also allowed to watch a TV show at this time or play Angry Birds while I write a blog post or catch up with friends.
3:00 – 5:00 More playtime and dinner prep.
5:00 – 6:00 Dinner and cleanup
6:00 – Family time. We like to ride bikes together or go for a walk to a local creamery if it’s nice. We also have dance parties, make a supreme mess of the house, or visit with grandparents.
8:00 Bedtime for the boys . Since our boys go to bed early it gives my husband and I time to catch up. You can imagine how wild and crazy we are…you can usually find us reading books and eating Oreos.
What is your one must-have kitchen tool or gadget?
Everything in my kitchen would be a disaster if it weren’t for my LOUD kitchen timer. I am often knee high in a pile of laundry or playing an intense game of Candy Land when it beeps and reminds me of something delicious (and probably sinful) coming out of the oven.
What is your favorite part of your day? Why?
My favorite part of the day is when we are all together as a family and the boys are getting along well. Our schedule is pretty unpredictable at this season in our lives but my husband and I take the quiet times when they come and enjoy hearing our boys laugh together.
What is your LEAST favorite part of the day? Why?
My least favorite part of the day is whenever my boys aren’t getting along. It happens.
If you could choose one room in your house to remodel (on an unlimited budget!) which room would it be and why?
Our kitchen of course! It has wood paneling and linoleum flooring and it in serious need of an overhaul. My oven has clocks and timers with knobs that need to be turned. What?
What is your favorite quote or verse?
If you know me at all you will know how funny it is that I’m training for a 5k. I’m excited and nervous all at the same time. If I come to a particularly difficult patch during my run I think of this quote that I read a long while ago (but I can’t remember where): “There will be a day I cannot run. Today is not that day.”
What recipe on your blog are you most proud of?
I am most proud of my Peanut Butter Truffle Mousse Cheesecake. I came up with the recipe to celebrate our 10 year wedding anniversary.
What recipe on your blog do your readers seem to love most?
My Mounds Brownies recipe is the most popular with my readers. It starts with a mix and ends with a tub of canned frosting. But the middle is totally homemade so there. It is such an easy recipe to adapt so I think that is the draw for people.
