I’ve been loooooving salmon lately. We live in a pretty small town but there are one or two good restaurants and one has a salmon dish that I just love. I order it often because truthfully, I’m a bit intimidated by cooking it at home. I know it’s not difficult, but it’s just a lack of experience and practice on my part, truthfully. When The Saucy Fish Co. approached me about teaming up to share their product with you guys, I was intrigued! Fish…made easier to cook at home? This sounds right up my alley.

As I’ve talked about before, I typically share products with you guys that we’re already using and loving in our home. This was a new one to me so I headed to their website to check it out. The first place I usually look is at the ingredients in the product. Just like I would do at the store! I look for ingredients that my family tries to stay away from (artificial colors, high fructose corn syrup, MSG, you know…that kind of stuff). We’re not perfect but I try to cook as clean as possible. The Saucy Fish Co. passed that test! The next test is taste and ease of cooking. If it tastes like junk, I’m not going to tell you guys to go out and buy it. Ick.

Well, I’m happy to report that I have 3 packages of this salmon in the freezer right now that I purchased with my own money. It’s good stuff and it makes for a super quick and easy dinner, which I obviously love.

The fish comes frozen and pre-seasoned with a cooking bag and sauce that complements the flavor (pictured in the opened package above). It’s like salmon for dummies! This Herb Crusted Atlantic Salmon came paired with a Lemon Butter Sauce and having that all done and figured out for you? Priceless. We love it with and without the sauce.

I wanted to keep things simple so I turned to my go-to cooking method — the sheet pan dinner. Seeing how much you all love the apple gouda stuffed chicken with sweet potatoes, I know you won’t be opposed to more sheet pan meals. We’ve also done baked chicken parmesan and broccoli on a sheet pan and hasselback chicken with spinach and artichokes, so I figured it was time to branch away from chicken. Enter, salmon and asparagus!

I amped up the herbs and lemon that already accompanied the salmon with some dill and lemon seasoned asparagus and potatoes. The sauce is lemony and buttery and everything you want in a sauce and you’ll love drizzling it over the fish, the vegetables, and the potatoes. It’s a complete meal, all on one pan. We loved this and have actually had it multiple times since I first made it.

The salmon and asparagus make for the perfect spring or summer meal and you’ll love how the lemon ties it all together.  Leftovers are great too, I actually ate the salmon cold and it still tasted fantastic.

Salmon and Asparagus Sheet Pan Dinner with Potatoes

Ingredients

  • 1 package (9.5oz) The Saucy Fish Co. Herb Crusted Atlantic Salmon
  • 1 bunch of asparagus (enough for 2 people), washed and tough ends removed
  • 1/2 lemon, cut into 4 wedges, seeds removed
  • 1 heaping cup baby potatoes, or diced potatoes
  • 1/4 teaspoon salt, divided
  • 1/4 teaspoon black pepper, divided

Instructions

  1. Preheat oven to 375°F. Place fish in provided bag as directed on package.
  2. Place bag on parchment paper lined baking sheet. On the other half of the baking sheet, toss potatoes with 1 teaspoon olive oil and sprinkle with 1/8 teaspoon salt and 1/8 teaspoon black pepper. Add lemons.
  3. Cook for 14 minutes.
  4. Meanwhile, combine asparagus with 1 teaspoon olive oil and a 1/8 teaspoon salt and pepper (I do this in a zip-top bag!)
  5. Add asparagus and cook for additional 12-14 minutes or until fish is cooked through, potatoes are tender, and asparagus is crisp tender,.
  6. Meanwhile, prepare the sauce as directed on the package.
  7. Carefully remove fish from bag and serve with asparagus, potatoes, and sauce.

Notes

The sauce that comes with the salmon is great on asparagus and potatoes, too!

My asparagus was on the thicker side – if yours is thinner, adjust the cooking time to prevent it from overcooking.

Husband’s take: I think he was happy I was actually cooking fish! No complaints from that guy.
Changes I would make: None are necessary, but if you have different vegetables, it’s easily adaptable. Try green beans!
