Today’s “a day in the life” is the most lovely Krista of Joyful Healthy Eats. I had the absolute pleasure of meeting Krista during Sharing by the Shore. We hit it off immediately and I just know that we’re going to be friends for a long time. She’s a mom, a blogger and just an all-around cool person. Luckily for me, I get to hang out with her again in November. Luckily for you, you get to learn more about her now! 



Tell me about yourself and how you started food blogging.

I grew up in the kitchen! My mom always had my brother and I in the kitchen making dinner for the night, not in a slave labor kinda way, but in a quality time kinda way. Both of us learned how to mix and match different flavors and that is where my passion for cooking began. In April of 2012, my husband and I had our first baby. At the time I was working, but decided in December that I wanted to come home and be with my little man. I am not the type to just sit around, I needed something to do so I prayed about it and thought… I’ll do a food blog! I had been following Our Best Bites for a while and loved their site so I thought I could make my own.

I had NO idea what I was doing when I first started. I built my own website using code (that I did not know), taught myself how to use a DSLR camera in manual mode (eek), and then starting typing. I love it now and couldn’t imagine doing anything else! The community I have built with people all over the country is unreal. The opportunities laid at my feet I would have never dreamed off. I feel like I have the best job ever and can still be the mom I want to be!

Take me through your day.

7AM wake up, get COFFEE, make a yogurt parfait, read a quick devotionalKrista - Healthy Joyful Eats

7:15 – 8:30AM promote post for the day (M/W/F)

8:30 – 10AM make breakfast and play with my little guy

10:15AM grocery store run

11:15 – 11:45AM lunch

12:15PM workout and shower (the shower part may or may not happen every day haha)

1-3:30PM little man’s nap time and my work time (editing photos, writing posts, work on high priority tasks)

3:30 – 4:30PM play with Cason, usually legos, coloring, jumping on the trampoline, candy land or mouse trap

4:30 – 5:30PM work on dinner prep stuff, call the hubbie to find out when he will be home, cook dinner

5:30 – 6PM set up my shots & photograph dinner (with little man’s assistance)

6 – 6:30PM eat dinner

6:30 – 7PM play with little man, facetime family, bath time

7 – 7:20PM put little man down for bed

7:30 – 10PM pour a glass of wine for me and the hubbie, watch a couple of our DVR shows (Suits, Bachelor in Paradise, Survivor), edit photos, and respond to emails and comments

10PM night night time

What is your one must-have kitchen tool or gadget?

A good set of knives! My husband recently bought me a NICE set of knives from Sur La Table and let me tell you… its a game changer. My knives cut through meat like it’s butter! I feel so much safer with the knives I have now as opposed to the dull and worn down ones I had before! Invest people!

What are the top 5 essential items in your Pantry?

Chipotle Peppers in Adobe Sauce

Coconut Oil

Homemade Granola

Peanut Butter

Annie’s Mac & Cheese (my little guys favorite)

What is your LEAST favorite part of the day? Why?

Cleaning up the kitchen! I loathe dishes!

If you could choose one room in your house to remodel (on an unlimited budget!) which room would it be and why?

Um.. that is an no brainer! I would remodel the kitchen in a heartbeat. It’s the room I spend the most time in. I don’t have a lot of storage space and the room has NO windows in it which kills me, it’s so so dark.

The good news is, we will be building a custom house within the next 2-3 years so I get to build the kitchen of my dreams! Top notch appliances, white cabinets, lots of storage space, a big island in the middle, antique pendant lights hanging down.. I CANNOT WAIT!

What is your favorite day of the week? Why?

My favorite day of the week is a toss up. It’s either Thursday, because that’s date night with my hubbie; or Friday night because it’s our family night together. Friday night we either go out to dinner together, do something fun outside, have pizza night, or do dinner and a movie at home with our little guy. LOVE those nights!

Can you tell my love language is quality time? haha

If you had to choose one place to travel to every year, where would it be? Why? Have you been there before? 

That’s a tough one. I can’t pick just one! I would love to go to Kauai ever year on a family vacation and New York for a quick getaway weekend!

Kauai because I think it’s the best of the Hawaiian Islands. It’s known as the garden island because it is absolutely beautiful. Island life there is just chill. People go to the beach around sunset and hang out there just to watch “the show”, they applaud after the sun goes down and then head home. It’s awesome! And New York because it’s foodie town, duh! I would just eat my way through New York and try to stalk Bobby Flay as best I could!! (my heart goes pitter patter for him)

What is your favorite quote or verse?

My favorite verse is Hosea 2:14 “Therefore, behold, I will allure her, and bring her into the wilderness and speak kindly to her.”

The reason I love this verse is because God is talking about this woman who was at her all time low. She was at the very bottom of life, not seeing any upside. Basically in the “desert” or “wilderness” of life. God says that he is going to “allure her out into the wilderness” where she has nothing else to lean on but him, and then he is going to speak tenderly to her… To speak into her life, give her hope and a purpose!

I have gone through some pretty ROUGH seasons in life, {as I’m sure most of you have} and the reason I love this verse so much is because I can see how God “spoke kindly” to me in my lowest of lows. He will never leave us in the wilderness, he will tell us who he is to us personally (our protector, comforter, defender, deliverer, etc) and empower us to move forward in HIS strength! LOVE THAT!

What recipe on your blog are you most proud of?

Hmm.. that’s a toss up I have to do one healthy and one joyful.. hehe :)

What is your guilty food pleasure that you’re embarrassed to fess up to? Kraft Mac & Cheese? Spagetti-o’s? Canned cheese? We promise not to judge!

I LOVE the boneless wings and fries from WingStop {kinda like a Buffalo Wild Wings}. When it’s football season I would say maybe twice a month we go to WingStop, order out, and set up shop at home in front of the TV watching games and drinking Dos XX’s beer!

What have you found to be the most challenging part of blogging?

Keeping up with emails, social media marketing, and then trying to reach out to brands!!! It’s exhausting, there are not enough hours in the day to do that as well as have a family life!

Do you have any advice for someone who is interested in cooking or food blogging?

To it because you love it, not because you think you’re going to make money at it! Learn, dive in, google stuff, invest in yourself (whether that be props, a camera, classes, etc). It is a blast, but if you don’t love what you are doing then you will get burnt out quick so make sure to set realistic goals and expectations for yourself!
