If you’re not a fan of tart things – don’t stop reading. All it takes is a bit more sugar to achieve sweet perfection if that’s more your style.

So, tell me. What have you all been up to this summer? I’m just loving having E home – we’ve been exploring new parks already and I have so many more fun things planned for the summer months.

Ben made it through graduation (it went great!) and he’s still working like a madman. I think people forget that high school principals don’t get the summer off like teachers do. He keeps on trucking right through June, July and August and then we blink and September is here.

However, we do get to see him a bit more since there are fewer evening events (concerts, games, meetings). This translates to him standing behind the grill while I enjoy a popsicle. Ha! Not quite, but we do very much enjoy that extra time with him during the summer.

And I hope this doesn’t come off as complaining, because I’m not. I’m very grateful that he has a great job and that he’s able to impact hundreds of young lives – even if it means I have to sacrifice a little of my time with him.

On the subject of popsicles, these couldn’t be easier to make. Throw blueberries into the blender with some lemon zest, freshly squeezed lemon juice, and yogurt, for a little added protein and creaminess. Sweeten with your choice of sweetener – I use Stevia for these but sugar is my normal go-to. Honey would be great, too!

Pour into the molds, freeze and enjoy! You’re done and ready to sit down, put your feet up, and watch your husband grill. Or something like that.

Tart Blueberry Lemon Popsicles

Prep Time: 5 minutes
Additional Time: 4 hours
Total Time: 4 hours 5 minutes

Tart blueberry lemon popsicles are undeniably refreshing and might bring a pucker to your lips! If you have a sweet tooth, they are easy to sweeten.

Ingredients

  • 2 cups frozen or fresh blueberries
  • 1 teaspoon lemon zest
  • juice of one lemon
  • 1/2 cup water
  • 1/2 cup plain Greek yogurt
  • 4 teaspoons stevia, sugar, or honey (this yields a very tart ice pop – feel free to add more to taste)

Instructions

  1. In a blender or a food processor, blend all ingredients until smooth.
  2. Taste mixture and add more sugar as desired.
  3. Pour into popsicle molds and freeze until solid – at least 4 hours.
  4. When ready to eat, remove from popsicle molds and enjoy immediately!

Verdict: Love these tart blueberry lemon popsicles. I go for tart over sweet anytime.
Husband’s take: Too tart for him – next time I might add a touch more sugar for him.
Changes I would make: None are necessary but if I haven’t mentioned it yet, they are tart. Make sure you taste the mixture and add sugar if you want before you freeze them. It’s easier to add sugar before they are frozen. Of course the tartness also depends on how sweet your berries are as well as how much juice you extract from your lemon. It’s always smart to taste as you go!
Difficulty: Oh so easy.
