This recipe is SO simple and so good. I love adding this cilantro lime rice to a Mexican meal. It has bright flavors and brings life to what might be a heavy, cheesy and spicy meal (nothing wrong with that!). I love the flavors of the lime and cilantro with the rice. I could not stop eating this, even right out of the bowl I mixed it in.
If any of you eat at the restaurant Chipotle, this rice may sound familiar. It is a copycat of their delicious rice (do you know they also have brown rice now?). This version probably has much less oil and fat than their version though, and still tastes just as great. Take a cue from them and throw it on a burrito! It would be great with these taco chicken tenders, too.
Cilantro Lime Rice
Similar to the rice you love at Chipotle and so easy to make at home. The fresh taste of this cilantro lime rice is the perfect addition to any meal.
- 2 cups long grain white rice
- 4 cups water
- 1-2 teaspoons salt depending on taste (we’re trying to cut back, so I used 1)
- the juice of 1 lime
- 6 tablespoons chopped fresh cilantro
- 6 teaspoons canola or vegetable oil
- In a medium pot, add rice, water, 2 teaspoons of oil and salt. Boil on high until the water is just covering the rice.
- Reduce heat to low, cover and continue to cook for 10-15 minutes or until rice is cooked. Remove from heat and keep covered for 5 minutes.
- Meanwhile, in a large serving bowl, combine lime juice, cilantro, and remaining oil. Add rice when it has finished cooking and toss until mixed, fluffing rice with a fork as needed.

Verdict: Loved this and will definitely be making it again.
Husband’s take: He absolutely loved Chipotle so he was thrilled about this rice and liked that it was healthier (lower in fat and sodium) than the restaurant version.
