Alright–I’m getting with the blogging program now (enough with the wintry beef stew recipes, right?) and posting some southwestern and Mexican inspired recipes for the rest of the week that would work for any Cinco de Mayo party.

I’m starting with these Taco Chicken Tenders that are actually perfect for any day. My family loved these and I think they are great for kids. Healthy and fun to dip in salsa. My daughter adores anything she can “dip dip dip.” They come together really quickly and are really flavorful thanks the homemade taco seasoning. The tortilla chip coating give the chicken tenders a great crunch and is a fun change from typical bread crumb coating of chicken tenders.

They come together just like any other chicken tender would: flour, egg, and a crunchy layer, in this case, the tortilla chips. And you can feel good about serving these to your family because they are baked, not fried. Taco Chicken Tenders

These taco chicken tenders are great for a party, but your kids will love them too! Super quick and easy to make.

Ingredients:

  • 2 pounds chicken tenders or boneless, skinless chicken breasts cut into equal sized strips
  • 1 cup flour
  • 1 tablespoon taco seasoning, divided
  • 2 eggs, beaten
  • 1 1/2 cups crushed tortilla chips
  • salsa for dipping, optional

Directions:

  1. Preheat oven to 400 degrees F. Spray a large sheet pan with non-stick cooking spray.
  2. Place flour and half of taco seasoning in a large shallow bowl. Place beaten eggs in another shallow bowl, and chips mixed with the rest of the taco seasoning in a third bowl.
  3. Coat each chicken strip in flour mixture, then dip in eggs (let excess drip off), and then finally in chip mixture. Place chicken strip on prepared tray and repeat until all chicken strips are coated.
  4. Bake for 20 minutes or until cooked through. Enjoy hot with salsa for dipping.

Verdict: I loved these! Just the right amount of spice, and perfect crunchy coating.
Husband’s take: He loved these as well.
How I served them to my two-year-old, E: As is! She loved dipping these in salsa.
Changes I would make: None are necessary, but if you like things a bit spicier or more mild, adjust the taco seasoning as desired.
Difficulty: Easy!
