Things I Have Been Eating {From Some of My Favorite Blogs}

Sunday post! I have made lots of recipes from some of my favorite blogs lately. I was going to separate posts for each of these, but I decided to give them all to you at once. Hope you are all having a great weekend! Make sure to whip some of these dishes up this week, they are all winners, and perfect weeknight meals. I’m helping you menu plan–you can thank me later.

Monday? Peach Whiskey BBQ Chicken.

Tuesday? In a Hurry Tamale Pie.

Wednesday? Crockpot BBQ Beer Chicken.

Thursday? Roasted Butternut Squash Salad with Apple Cider Vinaigrette (Or make that for Meatless Monday if you do that.)

Friday? Pizza. Obviously.

Okay, so maybe that is a lot of chicken. Just make these recipes in the next few weeks. You won’t regret it.

The Pioneer WomanPeach Whiskey Barbeque Chicken

Verdict: Loved, loved, loved this. The sweetness with the tangy barbecue sauce was a huge hit.
Hubby’s take: Also loved it! He ate the leftovers for lunch the following day.
Changes I would/did make: I reduced the garlic (for hubs). Next time, I might add a bit of cornstarch to thicken up the sauce a little next time. The sauce was so delicious that you really want it to stick so you can eat as much as possible.
Difficulty: Easy!

Eat Live Run: In-A-Hurry Tamale Pie

Verdict: Delicious. Loved the ease of preparation. Healthy, tasty, and easy. Can’t go wrong!
Hubby’s take: He liked it but said he would like it more with less polenta.
Changes I would/did make: I added diced chicken breast for my meat loving hubs.
Difficulty: Easy!

How Sweet It Is: Crockpot BBQ Beer Chicken

Verdict: Another super easy recipe, smelled so good and tasted great! Mine was quite heavy on the barbecue sauce, so I’d recommend adding just what you need, you can always add more at the end.
Hubby’s take: Too saucy for him, but he liked the flavors.
Changes I would/did make: None.
Difficulty: Easy!

In Good Taste: Roasted Butternut Squash Salad with Apple Cider Vinaigrette

Verdict: I’ve had this salad 3 times. Since Friday. It might have something to do with the fact that the squash I roasted was insanely huge, but it has more to do with the fact that I. Cannot. Get. Enough. Of. This. Salad.
Hubby’s take: He liked it; I made it as a side for him rather than the meal that it was/has been for me.
Changes I would/did make: I used baby spinach instead of the arugula, because it is what I had in the house.
Difficulty: Easy!
