With Memorial Day right around the corner, it’s time to plan out some fun patriotic eats to help remember those who died serving our country. Our country wouldn’t be what it is today without the sacrifices of these brave men, women, and their families.

So what do you do when you don’t want to cook but you definitely want to eat? Find EASY and fun recipes. Easy because you want to get it over with quickly, but fun because you still want to enjoy the great food — especially if it’s patriotic themed for Memorial Day. Easy is also important for those who attend or walk in parades on Memorial Day. I haven’t been to a Memorial Day parade in a long time – my job as a (very) part-time physical therapist usually has me working in the hospital on Memorial Day. Ben has mentioned walking in a parade in his uniform, maybe this will be the year we finally do it.

This recipe is great for easy entertaining because you can mix up the fruit mixture (shall we call it a fruit salsa?) and then just scoop it into the pre-baked phyllo dough shells. The fruit mixture has added flavor thanks to lime zest and lime juice. That tartness is balanced out by Stevia In The Raw®. These Mini Patriotic Fruit Tarts are beautiful, easy to make, and a refreshing treat for Memorial Day, Independence Day, or ANY day!

Ingredients:

  • 1 teaspoon lime zest
  • 1 cup small diced fresh strawberries
  • 1 cup fresh blueberries
  • 3/4 cup small diced jicama
  • 1 tablespoon fresh lime juice
  • 1 teaspoon Stevia In The Raw
  • 12-15 mini phyllo shells

Directions:

  1. In a medium-sized mixing bowl, combine all ingredients except phyllo shells. Taste and add more Stevia In The Raw if desired.
  2. Scoop into mini phyllo shells immediately prior to serving.

Verdict: When I make these patriotic fruit tarts, I cannot stop eating them!
Husband’s take: No complaints from the peanut gallery.
Changes I would make: None are necessary, but feel free to try these patriotic fruit tarts with different types of fruit!
Difficulty: Super duper easy.
