Carrot Cake Pancakes

 These pancakes from Krista of Budget Gourmet Mom are healthy because they have carrots in them, right?

So, guess what!?

You get to have cake for breakfast.

Let’s pretend you don’t do that already when you have leftover dessert sitting on the counter just begging to be eaten. Please. You know you do it so don’t give me that look.

Today I am making cake for breakfast completely acceptable. So no more sneaking bites when the kids aren’t looking or hiding that brownie behind your back. Today you will be sitting with your kids at the breakfast table and enjoying a huge pile of carrot cake pancakes. Cream cheese glaze and all.

I may have just become your best friend. And your kids super hero.

But before I get ahead of myself give these a try and tell me they are not the best thing since Nutella.

Carrot Cake Pancakes

2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
3 tablespoons sugar
3 tablespoon oil
1 egg
1 cup buttermilk
1 cup milk
1 ½ cups shredded carrot

Cream Cheese Glaze

4 oz cream cheese, softened
2 cups powdered sugar
2 tablespoons milk or water

Directions:

Preheat a skillet over medium heat.

In a medium bowl sift together the flour, salt, baking soda, baking powder, cinnamon, and sugar.

Add the oil, egg, buttermilk, and milk.  Stir until combined.  Fold in the carrots.

Spray the skillet with non-stick cooking spray.  Cook 1/4 cup of pancake batter at a time.  Once the top begins to bubble it’s ready to flip.  Cook until each side is golden brown.  Serve immediately with the cream cheese glaze.

Cream Cheese Glaze

In a medium bowl beat together the cream cheese and milk or water.  Add the powdered sugar and beat until smooth.  Add more milk or water until you reach the desired consistency.

I would never guess that these pancakes are made with carrots. This looks just amazing. Healthy and delicious at the same time. Perfect!

This would be quite the treat. I would have to make these on a weekend, probably in the winter so I can just lay on the couch for hours afterwards.
